Apple-Cheddar Corn Bread
These cornbread wedges embody the flavors of the holidays. The apples lend moistness to the cornmeal, and cheddar is a classic partner to this fruit.
Yield: 8 servings.
INGREDIENTS
- Nonstick cooking spray, oil, or butter
- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ cup sugar
- 1 tablespoon baking powder
- 1 cup milk
- ¼ cup (1/2 stick) butter, melted
- 1 large egg
- 2 small tart red apples, peeled and chopped
- ½ cup (2 ounces) shredded cheddar cheese
DIRECTIONS
Preheat the oven to 425 degrees Fahrenheit. Using the nonstick spray, oil, or butter, grease a 9-inch round baking pan or iron skillet. Combine the cornmeal, flour, sugar, and baking powder in a large bowl, whisking to mix well. Using an electric mixer with a large bowl, beat the milk, butter, and egg at maximum speed until well blended. Add the flour mixture and stir just until moistened. Fold in the apples and cheese, and pour the mixture into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 20 to 25 minutes. Cool in the pan on a wire rack.
Cheddar Bacon BBQ Bruschetta
These two-bite hot and cheesy appetizers can be assembled ahead of time and popped in the oven just before your holiday guests arrive. They come courtesy of Charlene Storck, who began her career with Corky’s in 1990 at the Jackson, Tennessee, location. She then spent 9 years in New Orleans before transferring to Memphis, where she met and married her husband Joel. They are just one of the many married couples that met and still work at Corky’s.
Yield: 16 servings.
INGREDIENTS
- ½ pound Corky’s BBQ pork shoulder, chopped
- 8 slices bacon, cooked and crumbled
- 1 medium tomato, chopped
- 2 baguettes, cut into ½-inch slices
- 2 tablespoons olive oil
- 2 cups shredded cheddar cheese
- Corky’s Original Recipe BBQ sauce (for serving)
DIRECTIONS
Preheat the broiler. In a medium bowl, mix together the pork, bacon, and tomato. Lay out the baguette slices on a sheet pan and drizzle with olive oil. Spoon the pork mixture onto the baguette slices and top with cheddar cheese. Broil until cheese melts, about 5 minutes. Remove from the oven and drizzle with BBQ sauce. Serve immediately.
Ashley’s Banana Pudding & Momo’s Hot Fudge Sauce
The Corky’s clan always serves this banana pudding with Momo’s Hot Fudge Sauce. Remember, everything tastes better with Momo’s – and banana pudding is no exception. Have fun with your serving dishes, too. You can make this in a pretty bowl or use small dishes for individual servings. We opted for mason-jar wine glasses. If you can’t use those for banana pudding, when can you?
Yield: 6 to 8 servings.
INGREDIENTS
- 1 (3.4 ounce) package instant vanilla pudding mix
- 3 cups whole milk
- 1 (14-ounce) can sweetened condensed milk
- 1 (12-ounce) container whipped topping
- 1 (12-ounce) box vanilla wafers
- 6 bananas, peeled and sliced
- 1 recipe Momo’s Hot Fudge Sauce (recipe below)
DIRECTIONS
In a large bowl, combine the pudding, milk, sweetened condensed milk, and whipped topping. Crush 10 wafers in a small bowl and set aside. In a serving dish layer the ingredients beginning with the whole vanilla wafters, the bananas, and then the pudding mixture. Repeat with as many layers as your bowl allows and top with wafer crumbs. Cover and chill in the refrigerator until ready to ser4ve. Top with Momo’s Hot Fudge Sauce, if desired
Momo’s Hot Fudge Sauce
Yield: 12 servings.
INGREDIENTS
- ½ cup (1 stick) unsalted butter (no substitions)
- 4 (1-ounce) squares unsweetened chocolate (Baker’s preferred)
- 2 cups granulated sugar
- 1 (12-ounce) can evaporated milk
- Pinch of salt
- 1 ½ teaspoons vanilla extract
DIRECTIONS
In a heavy-bottomed pot set over medium-low heat, gently melt the butter and chocolate together, stirring with a wooden spoon. Slowly add the sugar, evaporated milk, and salt and continue stirring until the mixture thickens and begins to boil, about 10 to 15 minutes. Allow to cool before adding the vanilla.
Store, covered, in the refrigerator for up to 2 weeks or in the freezer for up to 3 months. Reheat in the microwave or a warm water bath.
